3 Recipes For Quick & Easy Family Meals Everyone Will LOVE

Sometimes cooking for the entire family can be an absolute pain. Not everyone is happy with mums choice no matter how much effort you put in. 
Nonetheless, we have found you three easy to follow recipes that will take little time and effort. 
And moreover? We'll be utterly surprised if the whole family don't enjoy these - they're pretty darn tasty if we do say so. 
2 cloves garlic
2 red chillies
2 tbsp tamari sauce or soya
zest of lime
1 tbsp honey or maple
3 tbsp peanut butter
4 chicken legs
Preheat your oven 200°C. In a blender combine all the ingredients except the chicken legs into a smooth liquid. Place the chicken legs in a large zip lock bag and pour in the marinade zipping the bag closed before squeezing and pressing around the mix to cover the legs. Leave sit overnight or in the fridge a few hours before baking. Prepare a lined baking tray and tip out the chicken legs, using a spoon scrape out all excess marinade to drizzle over the chicken. Bake for 30-35 minutes (depending on the size of the chicken legs) until browned on the edges and cooked through.
½ tbsp coconut oil
75g chorizo, diced
½ red onion, diced
1 x 240g skinless chicken breast fillet, cut into 1cm slices
salt and pepper
4 cherry tomatoes, sliced in half
3 big fistfuls of baby spinach leaves
1 ball of mozzarella
20g pine nuts
Heat the coconut oil in a large frying pan over a medium to high heat. Add the chorizo and fry for a minute. Add the onion and fry for another minute. Increase the heat to maximum and add the chicken, along with a generous pinch of both salt and pepper. Stir-fry for about 3 minutes, by which time the chicken should be almost completely cooked through. Throw in the cherry tomatoes and cook for a minute or until they just begin to collapse. Toss in the spinach and stir through until fully wilted. Use a wooden spoon to make little pockets in the chicken and vegetable mixture, then drop in small chunks of the mozzarella. Turn off the heat and let the mozzarella melt before spooning the whole delicious lot onto a plate and scattering over the pine nuts.
400g minced lamb
A handful of fresh basil, roughly chopped
2 teaspoons of chopped capers OR chopped pitted black olives
2 garlic cloves, peeled and finely chopped
4 burger buns or ciabatta
Toppings of your choice: grilled courgette and aubergine slices, mozzarella and rocket is a fabulous option from the Lamb: Tasty, Easy, Fun website. I used tomato, mixed salad leaves and greek yoghurt mixed with some chopped mint leaves.
Place the minced lamb, garlic, olives or capes, salt and pepper in a bowl and combine well using clean hands. Divide the mixture into 4 and form into the shape of a burger. Make sure you squeeze as much air as possible from each burger so that they stay intact whilst cooking. Heat the olive oil in a pan and fry and seal the burgers on each side. Cook on each side for approximately 4-5 minutes, turning occasionally to ensure the burger doesn't stick to the pan. Toast the burger buns under the grill and assemble the burgers by placing the salad and leaves or grilled vegetables at the bottom and topping with the burger and your choice of sauce and the bun. The beauty of these burgers is that you can play around with different toppings for different flavours, creating something delicious every time. Superb and so simple.
