This slow cooker recipe is easy to prepare and results in delicious silky rice pudding. What a treat!

Comfort food has taken on a whole new meaning for us in recent weeks. Our daily meals and treats have become profound little checkpoints throughout the day. Many of us are trying to take things up a notch when it comes to meal planning and recipes so that we have something to look forward to. Our meals and treats break up the day and this comforting rice pudding is delicious at any time.

We are big fans of recipes that do not take long to prepare. Time has never been so precious between working from home, home schooling and trying to keep on top of basic house tasks. We are constantly on the lookout for recipes that have a short list of ingredients and that will be enjoyed by the whole family. Slow cooker rice pudding is a crowd pleaser because it had a lovely smoothe texture making it perfect for little ones to enjoy too. It is also the perfect basis for a delicious snack and gives everyone the opportunity to add their favourite toppings and accompaniments.

Traditionally rice pudding is a sweet dish but we'll leave that part up to you. The flavour combinations are limitless. You can add whatever takes your fancy.

To make slow cooker rice-pudding you literally need two ingredients to make the magic happen. Pudding rice and milk. The great thing about this recipe is that you can use any milk of your choice. We prefer to use unsweetened almond milk but you can use regular, soy or oat milk for example. It is really versatile and delicious.

This basic recipe will give you silky smoothe rice pudding in just four hours. It is the perfect quantity of milk to rice which results in a gorgeous texture. You can pop them in to the slow cooker and forget it completely.

As for flavour?

Traditionally rice pudding is a sweet dish but we'll leave that part up to you. The flavour combinations are limitless. You can add whatever takes your fancy. Jam is a really popular choice among children. Why not try cinnamon and maple syrup with some raisins thrown in for the last thirty minutes? Alternatively brown sugar and stewed apple is another gorgeous combination. Fresh raspberries and desiccated coconut is also a favourite here. Oh and let's not forget peanut butter and sliced banana - delicious!

Time needed: 2 minutes.

Method

  1. Place 120g of pudding rice in to the slow cooker

  2. Add 1 litre of milk

  3. Add preferred flavours (eg cinnamin and maple syrup)

  4. Give it a good stir

  5. Leave for 4 hours, stirring half way through.

  6. Serve with your favourite toppings!
