Spinach soup

Nutritious and creamy spinach soup that the family will love.

  • 1 tbsp olive oil
  • 1 onion (chop finely)
  • 1 large clove garlic
  • 1 potato (peel and in small squares)
  • 450 ml vegetable stock
  • 600ml low fat milk
  • 450g spinach

  • Heat the oil and add the onions and garlic. Cook gently until softened. This should take approx 5 minutes.
  • Add potato and stir for one minute.
  • Pour over the stock and simmer for 10 minutes until potato begins to get tender.
  • Add the milk and stir in half of the spinach. Simmer until the spinach has wilted (appox 15 mins).
  • Remove from heat and allow to cool.
  • Pour the soup into a blender along with the remaining spinach and pulse.
  • Reheat before serving.

To Serve:

Serve with cream and croutons.
