Spaghetti Carbonara

Spaghetti Carbonara that you’ll lick the plate clean for!

  • 90 g bacon or pancetta, chopped
  • 2 cloves garlic
  • 2 tbsp extra-virgin olive oil
  • 2 eggs
  • 50 g parmesan cheese grated
  • 1 tbsp chopped parsley
  • 2 tbsp crème fraîche  
  • 7 oz / 200 g spaghetti
  • Salt and black pepper to taste

  • Cut the bacon or pancetta into small bit sized pieces and fry on a hot pan in the oil until they start going crispy.
  • Crush the cloves of garlic and add to the pan.
  • Lightly beat the eggs in a bowl; add black pepper, parsley, crème fraiche and grated cheese.
  • Cook the pasta, drain it and add it to the egg mixture. Toss it quickly and thoroughly, making sure all the strands are coated with thickening egg and melting cheese.
  • Add the bacon and toss again.
  • Serve immediately

Serve with Garlic Bread.
