Smokey Sausage Casserole

This is one of those recipes that I find myself constantly sharing with my Mammy friends. It really is a crowd pleaser. It's delicious, a one pot wonder, is even nicer the next day and it includes sausages. What is it with children and sausages?
 
I make this at least once a fortnight and it's a really quick way of getting lots of “goodness” in to the little ones. It can be served in lots of different ways and can be made using whatever vegetables you have lying around. It's full of flavour and yet mild enough for little mouths.
 
You Will Need
  • 10-12 sausages of your choice. I would always try to go for sausages that are at least 70% Pork
  • 1 can of chopped tomatoes
  • 1 vegetable stock cube
  • 1 onion
  • 3 cloves of garlic
  • 1 tin of chickpeas
  • 2 pepper, 1 courgette, 2 carrots and a punnet of mushrooms OR whatever vegetables you have
  • 3 teaspoons smoked Paprika (is not spicy, just gives great colour and sweet smoky flavour)
  • 1 teaspoon of Garlic Powder
  • 2 teaspoons dried mixed herbs
  • Salt/Pepper to taste
Method
  • Brown sausages in a frying pan on a low heat. They don't need to be fully cooked. Just browned.
  • Chop onion, garlic and all other vegetables and add to a big pot. Sautee for 5-10 minutes to soften.
  • Remove sausages from the pan and chop in to little coin shapes.
  • Add sausages to pan along with chopped tomatoes and seasoning. Add mixed herbs and salt and pepper to taste also.
  • Add stock cube to empty chopped tomato can and fill with boiling water. Add stock to the pot.
  • Simmer on a low heat with the lid on for one hour.
  • After one hour add tin of chickpeas and further simmer with lid off for 30 minutes.
  • Serve with mashed potato or rice. A sprinkling of grated cheese before serving works very well.
