Oat and raisin cookies - dipped in chocolate

Oat and raisin cookies - dipped in chocolate

  • 6.5 oz soft butter
  • 8 oz caster sugar
  • 1 large egg
  • 4 oz plain flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon 
  • 8 oz oats
  • 3 oz raisins 
  • 2 large bars of your favorite plain chocolate (dark or dairy work equally as good)
Pre-heat the oven to 165°c and prepare two flat baking trays with grease proof paper. 
In a bowl, cream the butter and sugar together until creamy and fluffy. Then add the egg and mix until blended.
In a seperate bowl, sift the flour, cinnamon, salt and baking powder. Mix them to blend evenly and then add the oats & raisins. 1/3 at a time stir the dry ingredients into the butter mix until all ingredients are incorporated and evenly distrobuted.
Spoon tablespoons of the mix onto the baking trays leaving roughly 1.5" space between them, flatten the little heaps with the back of a big spoon to get your cookie shape.
You should get about 24 cookies from the mixture.
Bake them for 20 minutes until darkly golden.

Once baked, leave them on the baking trays to cool. Meanwhile melt the chocolate in a bowl over a pot of simmering water. I use 1/2 dairy and 1/2 dark but you can use whichever you prefer to or not at all!! The cookies are still delish to eat without the chocolate. Once the cookies are cool, spoon a tablespoon of chocolate over each cookie and allow to dry before eating - that's if you can!
