Good Old Fashioned Pancakes

  • 300 ml milk
  • 2 eggs
  • 100g plain flour
  • 1 tbsp oil or melted butter (plus extra for frying)
  • Pinch salt
  • In a large mixing bowl, put in the flour and salt. Make a well in the centre. Crack the eggs into the well, pour in approx 50ml milk and 1 tbsp oil.
  • Gently whisk the mixture, starting from the middle and working your way out until you get a smooth, thick paste. You can add a little milk if the mixture is too thick.
  • Pour in the remaining milk and continue to whisk until you have achieved a smooth consistency.
  • Tip* Transfer your mixture to a large jug as it is easier for pouring into the pan than using a spoon.
  • Heat a pan with oil or butter, wipe any excess oil off with kitchen paper. Pour enough mixture onto the pan to cover the base and remove any excess. Cook for approx. 30 seconds or until the top is bubbling. 
  • Turn the pancake and cook for the same time on the other side.
