Golden Cornbread

Golden Cornbread

Try our deliciously moist cornbread recipe.
  • 350g medium cornmeal
  • 160g  white spelt flour
  • 2 tablespoon of parmesan cheese
  • 1 roasted pepper
  • 2-3 tablespoon of soft goat cheese or light cream cheese
  • 7-8 fresh basil leaves torn
  • 1 ½ teaspoon of bread soda
  • 2 whole eggs
  • 300 mls buttermilk
  • ½ teaspoon of cracked pepper
  • Set oven at 180c
  • Mix all the dry ingredients thoroughly, leave aside cheese, red pepper and butter milk
  • Now mix in the buttermilk to get a slightly wet bread mix
  • Fold through the cheese and red pepper
  • Place in a lined or well oiled tin for baking , bake for 50 mins in the tin
  • Remove and place on rack to cool in the tin
  • After 15 mins the bread is set  and safe to remove from the tin
