Goats Cheese and Spinach Fritatta

This simple dish is great for making the best of leftovers:
 
Ingredients:
  • With this recipe you can add in whatever veggies you like.
  • 2 tablespoons cold pressed olive oil
  • 4 spring onions
  • 150g baby spinach
  • 10 eggs
  • Pinch of salt 
  • Pinch of ground black pepper
  • 150g goat’s cheese
Recipe:
  • Preheat the oven to 200C
  • Chop the spring onions; wilt the spinach in boiling water.
  • Put all the ingredients (except eggs) into oven proof pan
  • Sauté in pan for 5 minutes on a low heat 
  • Crack eggs into bowl and whisk, add salt and pepper
  • Pour the egg mixture into pan, cook until base and sides have set
  • Crumble the goat’s cheese over, place under grill until top turns brown.
