Delicious pork recipe that takes minutes

I love mixing things up when it comes to what we eat. It can sometimes be hard to justify a new recipe when the fear is there. You know, the fear that your child will not eat it. You know deep down that it would have been easier to make something that they know and love but how else will they ever try new things. That is what I tell myself anyway. 
I had a Pork steak in the freezer and wanted to do something a little bit different with it. Typically I would just roast pork and maybe serve it with stuffing and vegetables. Sunday roast situation. I fancied something a bit more exciting of a Tuesday last week though. I wanted some kind of a sticky BBQ dinner. Something like you would see on one of those food network shows. The one that visits the diners. I realize that I absolutely need to get over myself. 
Notions aside, the Pork actually turned out amazing and it was so easy to make. Our toddler loved it and I simply served with home-made chips, cauliflower and some savoury gravy. Next time I'll serve with chips and coleslaw which would work super well. 
You will need 
  • 1 Pork Steak or Pork Fillet
  • 1 Large Apple
  • Smoked Paprika
  • Honey
  • Make 5-6 slits horizontally down the length of the pork fillet
  • Peel an apple and chop in to thick slices 
  • Place an apple slice in each slit
  • Sprinkle the whole fillet with smoked paprika 
  • Drizzle the whole fillet with one tablespoon of honey
  • Place in tin foil and bake low and slow for 2 hours.
