Delicious healthy oaty Pancakes you have to try

With Summer well and truly upon us we are busier than ever. We've committed to far too many play dates and days out but sure that's what it's all about. Summer camps are in full swing and mornings are busy once again. Having a quick and healthy breakfast can make all the difference. 
I batch cook these and get two days out of them. They are enjoyed hot or cold and can be a great on-the-go option. The kids will never know that they are full of oaty goodness. Oats are slow releasing carbohydrates which means they will keep our little ones fuller for longer. Win Win. 
You Will Need 
60g Regular Porridge Oats 
1 cup of any yoghurt (plain, flavoured, whatever you have) 
2 teaspoons Vanilla Essence (orange essence works great too) 
2 large eggs 
2 teaspoons of honey 
teaspoon cinnamon.
  • Add everything to a bowl or container and combine. 
  • Blitz with a hand held blender or food processor 
  • Using a good non-stick pan heat up using oil or spray of choice
  • Add desired amount to pan on a medium heat and flip after about 30 seconds. (I use a ladle and this mixture gives about 10 mini pancakes)
  • Serve with Nutella, Peanut Butter, fruit etc. The topping options are endless.
