Chicken and Chorizo Pasta

Tasty and easy to make pasta for all the family.

  • 1 tbsp of Olive oil
  • 3 Chicken breasts
  • 180g Chorizo
  • 250g Mushrooms
  • 1 red pepper
  • 1 green pepper
  • 1 Onion
  • 1 Garlic clove crushed
  • 400g of chopped tomatoes
  • 100g crème fraiche
  • 1 tbsp of Paprika
  • 400 g penne pasta
  • Salt and black pepper
  • Grated cheese to sprinkle on top
  • Bring a large saucepan of water to the boil, add the pasta and cook as per instructions on the packet.
  • Chop the onion and crush or chop the garlic clove.  
  • Heat the oil in a large frying pan and add the onion and garlic, fry for 2 minutes.
  • Chop the peppers & mushrooms, add to the pan and cook for a further 3 minutes.
  • Dice the chorizo and add to the pan and cook for 3 minutes stirring occasionally.
  • Cut the chicken breasts and add to the pan and cook for 10 minutes.
  • Add the chopped tomatoes and paprika and bring to the boil, reduce the heat and simmer for a further 10 minutes stirring occasionally.
  • Spoon in the crème fraiche and simmer for a further 2-3 minutes.
To Serve:
Drain the pasta and spoon onto a plate or pasta bowl. Spoon the chicken and chorizo sauce over the pasta and sprinkle with a little cheese.
This can also be served with creamy mashed potatoes or rice with garlic bread on the side.
