Buckwheat Pancakes/Crepes

Easy, quick and so tasty. Try these crepes for a delicious breakfast alternative.
  • 4 eggs
  • 1 cup water
  • ½ cup buckwheat flour
  • Pinch salt
  • Coconut fat or duck fat for cooking
  • Preheat the pan to medium heat
  • Beat the eggs with a whisk, make sure they are well whisked
  • Add the water and whisk well
  • Put the rest of the dry ingredients and mix until smooth
  • Put oil on the pan
  • Pour the batter onto the pan, about ¼ for each one
  • Move the pan in circular motion so that the batter coats the pan
  • Turn when the side is well cooked.
They can be stored in the fridge cooked or uncooked. They also freeze well.
These can use in replacement of bread, wheat, gluten, dairy and sugar free. 
Also can be used sweet or savoury.
