Wholesome Whole-wheat Blueberry Pancakes

Nutritious & fluffy pancakes that work great for breakfast or as a snack. 
Ingredients:
  • 115 grams whole wheat flour or wholemeal spelt 
  • Pinch of salt
  • 250ml milk 
  • 1 free range egg
  • Dash of local honey
  •  Teaspoon vanilla essence
  • Cup of blueberries
  • Knob of coconut oil
Method:
  • Mix all the ingredients together with whisk or mixer.
  • Let the batter mixture stand for 30 minutes
  • Heat the coconut oil on a pan
  • Pour a thin coating of the batter on pan, swirl it around  
  • Add a small amount of the blueberries on the pancake mixture
  • Let it cook for a few minutes, you will see tiny holes on the top, when it looks safe to turn, turn
  • Repeat, with the rest of the mixture.
