Hearty Tomato Soup

Delicious Easy Tomato Soup
Perfect for a winters day. Hearty and warming.
  • 3 lbs fresh tomatoes, washed and coarsely chopped (You can leave the skin and seed on)
  • 1 large onion, finely chopped.
  • 1 / 2 cup chicken or vegetable stock, or even just water
  • 1 Tbsp olive oil
  • 1 Tbsp butter
  • 1 tsp dried thyme (or 2 tsp fresh chopped) or ¼ tsp teaspoon dried oregano or 1/2 tsp finely chopped fresh oregano
  • 1 tsp salt
  • 1 / 4 tsp pepper
  • Optional: 3 / 4 cup cream or milk
  • Heat the butter and olive oil in a large saucepan and sauté the onion until it is translucent, about 5 minutes. 
  • Add all the remaining ingredients to the pan: tomatoes, herb, and stock salt, pepper and Mix well.
  • Bring to a boil, then lower the heat to a simmer and simmer for 15 minutes.
  • Remove from the heat and puree in batches in the container of a blender. Return the soup to the pot and reheat to a simmer, seasoning to taste with more salt and pepper.
  • If you prefer a very smooth soup you can strain the soup to remove all of the ‘bits’
  • If you wanted to make it a creamy tomato soup, simply stir in 3 / 4 cup cream or milk at the end.
To Serve:
Serve with croutons and basil.
