Three Beautiful Soup Recipes That The Whole Family Will Love

Soup is a brilliant way of getting the family to consume more vegetables. It's a healthy lunch, dinner or snack as well as being a warm bowl of comfort on the colder days. It's also generally a one pot wonder which means less cleaning up and fuss too.
Here are three beautiful soup recipes that the whole family will love.
Creamy Sweet Potato & Coconut Soup 
This one couldn't be easier and the flavour is out of this world. Simply use a knife to cut a cross shape in to 4 or 5 Sweet Potatoes and roast in a hot oven for 30-40 minutes. Finely dice a thumb-sized piece of ginger, 1 onion and two cloves of garlic. Sweat them in a pan for five minutes. When the potatoes have cooked scoop the flesh out and add to the pan of sautéed vegetables with 1 can of coconut milk and 200ml of chicken stock. Blitz until smooth and enjoy.
Ready In A Hurry Mushroom Soup 
Add three punnets of pre chopped mushrooms to a saucepan with 1 large onion diced, two finely sliced cloves of garlic, 3 cheese triangles (laughing cow or similar), 1 teaspoon of dried thyme and enough chicken or vegetable stock to cover everything. Bring to the boil and simmer for thirty minutes. Then blitz until smooth.
Cheesy Macaroni Soup
Add two tins of chopped tomatoes to 1 finely sliced onion, two finely sliced cloves of garlic, one red pepper, two carrots and 300ml of stock. Bring to the boil, simmer for 20 minutes and blitz until smooth. Add 2 cups of macaroni pasta and simmer until the pasta is cooked. Serve with a decent sprinkling of grated mature white cheddar and some crusty bread.
